Cook time: 15-20min
Yields: 12-14 cookies depending on how much dough you eat prior to cooking ;-)
Ingredients:
2C Unsweetened Coconut Shreds
1/2C Blanched Almond Flour
1/2C Honey
2 Eggs
2t Vanilla
Instructions:
Combine all ingredients into one bowl - just dump it in and stir with a spoon or mash with your hands! Make 2 inch flat cookies with your hands and bake on parchment paper for 15-20min at 350F until golden! Cool and consume!
Liz, I made something very similar from a website recipe that was titled "5 Ingredient Chewy Vanilla Coconut Cookies"--I took 2 dozen of them in ziploc bags on our recent riverboat cruise in Europe. They kept well and tasted great!
